Serves 1 / Difficulty – Easy / Ready in 20 minutes
This is the famous sandwich from Birds of Prey. It’s basically a bacon, egg and cheese sandwich but what makes it so special is the ciabatta bread.
Ingredients
1 ciabatta roll or half a ciabatta bread
Butter (optional – I don’t bother with this)
3 streaky bacon slices
Olive oil
1 egg
2 montery jack cheese slices or processed cheese slices
Dash of tabasco sauce
Method
- Either grill or fry the bacon, turn mid-way and cook until slightly crispy.
- While the bacon is cooking toast the ciabatta bread on the inside until golden. When done place on a plate and while the bread is still hot (spread the butter optional) add a slice of cheese on each toasted side.
- Take a saucepan, put on a medium heat add a little olive oil, after a minute crack and fry the egg. When the egg white is nearly done flip the egg over and cook for a further 2 minutes so the egg yolk is not too runny. Then place on one side of the ciabatta.
- Add the cooked streaky bacon on top of the egg. Splash with a little tabasco and then place the second half of ciabatta on top.
Serve with some french fries if you want to make this a lunchtime sandwich.
