Makes 2 sandwiches / Difficulty – Easy / 10 minutes prep and 50 minutes cooking time.
I dreamt up this sandwich after watching an episode of the Sopranos. One of the gang was handing out sandwiches and Uncle Junior looked at one of the other guys sandwiches and said to himself ‘Peppers and eggs! that’s watch I shoulda had…!’. I was bemused as it sounded like such a strange sandwich, which meant I had to try it… and very glad I did, it is one of my favourites (and often requested by my wife). It definitely works best on homemade granary bread.
Ingredients
2 Peppers (either red or orange but not green)
2 Eggs
Olive oil
Hummus
Salt
Granary bread
Method
- Heat the oven to 220
- Take an oven proof dish and add the sliced peppers, drizzle with olive oil and season with salt and pepper. Place in the oven and cook for 45 minutes, turning occasionally.
- Once the peppers are cooked take out the oven and place into a wok with some of the oil on a medium heat. Crack open and add both the eggs and stir fry until the egg is cooked. Place into a dish and leave to cool.
- While the peppers and eggs are cooling. Slice 4 slices of bread and spread some hummus onto the bread.
- When the peppers and eggs are cool enough to your liking add the filling to the bread and hummus. You won’t need any butter as this is already quite moist.
