Serves 2 / Difficulty – Easy / Prep 10 mins and 20 minutes cooking time.
This is a low calorie easy dish that creates a nice sauce for the salmon – as lovely as salmon is cooked plainly it can get a bit boring sometimes. This sauce gives it a nice pick-me-up.
Ingredients
2 Salmon fillets
Juice of 1 Lemon
Olive oil
1 teaspoon of ground paprika
Dried chilli flakes
Salt and pepper
Method
- Preheat the oven to 180-220c depending on how crispy you want the topping.
- Place the salmon fillet onto a lightly oiled small oven proof dish. You want it large enough to contain the salmon but keep it bathed in the lemon juice and olive oil.
- Drizzle over the lemon juice and a little olive oil. Sprinkle with chilli flakes and paprika and season with salt and freshly ground black pepper.
- Bake in the oven for 20 minutes.
Serve with some steamed tender stem broccoli or a salad.
