I like to vary my recipes… a lot. Lucky living in London means you can get a lot of ingredients but not everything, all of the time, so I adapt when necessary and I’ll mention when I do. But adapting and finding alternatives is all part of the fun of cooking, and really rewarding when you still nail that flavour.
