Serves 2 / Difficulty – Easy / Prep and cooking time around 45 minutes depending on the type of rice used
This is one of my favourite Indian rice dishes and a great addition to any of the Indian curries in this website.
Ingredients
120g Basmati Rice
5 medium chestnut mushrooms or handful of button mushrooms
Half an onion
Teaspoon of cumin seeds
Teaspoon of salt
Ghee
Method
Cook the rice according to instructions adding the salt and then allow to cool.
Add a large tablespoon of ghee to a wok or frying pan on a medium heat, add the cumin seeds and fry for a few minutes.
Add the onion and fry for 5 minutes, then add the mushrooms. Sprinkle with a pinch of salt. Gently fry until the mushrooms are soft.
When the mushrooms are ready turn the heat to high, add the rice and stir fry until the rice is nice and hot.
Check for seasoning and then serve.
