Makes 6-8 pancakes / Difficulty – Easy / Prep 5 minutes and cooked in 10
These make lovely fluffy pancakes and are best served with grilled, crispy streaky bacon and loads of good quality Maple Syrup. I much prefer them to English pancakes.
Ingredients
190g self raising flour
1 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
300 ml milk
1 egg
3 tablespoons butter, melted, plus more for frying
Method
- Sift together the flour, baking powder into a food mixer bowl. Then add the salt and sugar.
- Make a well in the centre and pour in the milk, egg and melted butter and mix until you get a nice smooth batter.
- Add some more butter to a large frying pan and heat to a medium-high heat.
- Pour or scoop portions of the batter into the pan and brown on both sides.
Serve with crispy grilled streaky bacon and maple syrup.
