Serves 2 / Difficulty – Medium / Prep 15 minutes and 10 minutes cooking time.
There are a fair few ingredients for this pitta but the end result is worth it. I enjoy as a nice lunch served warm but you could make ahead for a packed lunch.
Ingredients
300g Chicken breast
Splash of Olive oil
Cheese of your choice
6 Cherry tomatoes
Some salad leaves
4 tablespoons of mayonnaise
A squirt of garlic puree (I like ‘Very lazy garlic paste puree’ which you can buy at Ocado). Or if you are a purest you can puree a clove of garlic but I think this sandwich takes long enough 🙂
Salt and pepper
Sprinkle of truffle oil
Method
- Slice the chicken breast into slithers.
- Take a frying pan and heat to a medium to high heat, you want the chicken breast to eventually brown and start to caramelise.
- add the oil, then add the chicken and season with salt and pepper and cook turning occasionally on both sides for about 10 minutes or until browned on both sides.
- Once done leave to cool slightly.
- Warm the pitta so you can slice open. Once done you can leave to cool slightly and then slice open.
- Slice the tomatoes and season with some rock salt ground in a salt mill.
- Slice the cheese.
- Add the mayonnaise and garlic and mix together in a small bowl.
- Spread the mayo and hummus inside the pitta.
- Add all the other ingredients. Then sprinkle the truffle oil inside and serve.
