Serves 2 / Difficulty – Medium / Prep 20 minutes and around 10 minutes cooking time
For the truffle I find the Truffle Hunter brand quite good and judging by the reviews so do other people. I have tried other brands but they can be almost tasteless – the Truffle Hunter sells minced which you can buy here on Ocado or here on Amazon or they also sell sliced truffle.
Also available by Truffle Hunter (and other brands) is truffle in sea salt which I think would be good on this chip recipe but I yet to try this product.
To further enhance the truffle flavour you can use an actifry (the recipe is also on this page) which allows you to cook the chips in truffle oil (without otherwise using the whole bottle as you only need to use a little). For healthy cooking I have been using the Tefal Actifry for years which I highly recommend. Tefal was the first actifry I came across but there are more brands and price ranges on the market now.
Ingredients
For the chicken
2 chicken breast, pounded flat
Plain flour for dredging
2 eggs
Breadcrumbs for coating
Cajun spice mix
Salt and freshly ground pepper
Vegetable oil
For the chips
3 medium maris piper potatoes
Handful of grated parmesan
Truffle shavings or minced truffle
Salt for seasoning
Truffle oil if using an actifry or vegetable oil if not
Method
For the chicken
- Loosely wrap each chicken breast in cling film and pound flat (about 1cm will do it) with a kitchen mallet / tenderiser (I use a metal one similar to this).
- In a bowl add your breadcrumbs, a good shake of cajun spice mix and salt and pepper.
- Take 3 plates and add the flour in one, the egg in another and then add the breadcrumb mix in the third.
- Coat each chicken breast in flour, then the egg and then the breadcrumb mix.
- Heat about 2 cm of vegetable oil to 160°C and cook each breast for about 5 minutes turning if necessary.
For the chips
- Chip your maris piper potatoes and then dry with some kitchen towel.
If using an actifry
- Add the chips to the actifry, shake a generous amount of truffle oil over the chips and fry for 30-35 minutes.
If deep frying
- Heat the vegetable oil to 160°C and cook the chips for a few minutes taking them out before they brown.
- Then turn the oil up to 190°C and cook a second time until crispy and golden.
For the truffle and parmesan seasoning
- Place you chips into a bowl, season with a little salt and shave some truffle over the chips or spoon on some minced truffle depending on what you are using. Then give a good shake or stir to spread the truffle around the chips.
- Top with a generous amount of grated parmesan.
