This is a rich flavoursome tandoori curry, enjoy eaten as a main with some rice and Indian breads. This one is so easy to make as apart from the onion and ghee all the ingredients go into the marinade, but the end result is an impressive tasty curry dish.
Ingredients
Chicken breast – 800g
Plain yoghurt – 150g
Garlic, crushed – 4 tsp
Ginger, grated – 4 tsp
Tandoori powder – 5 tbsp
Chilli powder – 1 tsp
Coriander powder – 2 tsp
Ghee (or oil if you prefer) – 1 tbsp
Tinned tomatoes – 250g
Salt to taste
Onion, large, thinly sliced – x1
Method
Chop the chicken breast into bit size pieces.
Mix all the ingredients apart from the oil and onion, coat the chicken and marinate for around 2 hours or leave over night.
Heat a large saucepan, add the ghee and gently fry the sliced onion until opaque. Then add the chicken, give a few good stirs then reduce and simmer for about 30 minutes or until the chicken is cooked through. Taste for seasoning and serve with rice and some Indian breads.
