Serves 4 / Difficulty – Easy / Prep 20 minutes and cooks in 5
This is a quick, easy to make evening meal which tastes more impressive than the work that goes into it.
Ingredients
750g medium waxy potatoes, cut into wedges
1 head broccoli, cut into florets
250ml tub crème fraîche
2 tbsp wholegrain mustard
2 large or 4 small salmon fillets, cut into chunks
Handful grated parmesan
Method
- Boil the potatoes in salted water until softened, Place into a baking dish.
- Boil the broccoli florets in salted water for about 4 minutes until soft. Add to the potatoes.
- Add the chopped salmon over the potatoes and broccoli.
- Mix the creme fraîche and mustard together, season and spoon over the entire dish.
- Sprinkle the parmesan over the dish.
- Place under a preheated grill for about 5 minutes, it’s ready when the salmon is just cooked.
