This is my favourite bruschetta, its so quick and easy and for me just tastes of Italy. It serves as a great starter or an accompaniment to a glass of wine or a cheeky cocktail in the garden.
Ingredients
Two handfuls of finely chopped cherry tomatoes
A large clove of garlic finely chopped
A good slug of olive oil
Ground sea salt
Method
- Add all the chopped ingredients to a bowl.
- Pour over a generous amount of olive oil.
- Season with ground sea salt.
- Leave for at least ½ hour to marinade.
Serve on top of lightly toasted ciabatta or crusty bread.
