Serves 2 / Difficulty – Easy / Prep 5 minutes and ready in 15 minutes
I can never find fava beans so I use haricot which soaks up the lemon juice and olive oil just as well and makes a lovely soft to bite foul moudamas.
Ingredients
For the chicken
2 chicken breast, cut into cubes
Juice of half a lemon
2 pressed cloves of garlic
Olive oil
Salt and freshly ground pepper
For the foul moudamas
1 tin of fava beans or haricot beans, drained
Juice of 1 lemon
2 garlic cloves, pressed
100ml of olive oil
Salt to season
Method
For the foul moudamas
- Put the beans in a small saucepan, add the olive oil, lemon juice, garlic and salt.
- Bring to boil, then reduce the heat and simmer while you prepare the chicken, stir occasionally mashing the beans up a bit as you go.
- Cook for about 10 minutes and then pour into a bowl and leave to cool slightly.
For the chicken
- Put some olive oil in a large saucepan and stir in the garlic and cook for 1 minute.
- Add the chicken to the pan, season and fry for about 10 minutes on a medium heat, turning to make sure the chicken gets cooked all over.
- Just before the chicken is ready add the lemon juice. Turn the heat up to crisp up the sides of the chicken.
Serve with a side salad, some pitta bread and wedges of lemon.
