Makes 2 sandwiches / Difficulty – Easy / Prep 10 minutes.
This is a lovely soft messy sandwich, add some cheese or a dash of hot pepper sauce to add even more flavour.
Ingredients
2 brown baps or 4 slice of bread
200g tin of tuna in olive oil
2 eggs
1 spring onion
Mayonnaise
Salad leaves
Salt and pepper
Method
- Place the eggs in a saucepan of boiling water for 6 minutes. Then leave to cool, you can run under some cold water to speed things up.
- Chop the spring onion.
- Place the tuna in a large bowl. Add some mayonnaise and stir, keep adding mayo until the mixture no longer looks dry.
- Add the chopped onion, then peel the eggs and add to the mixture. Stir the spring onion and eggs, mashing the eggs as you go. Add some salt and pepper and give a final stir.
- Add the finished sandwich filling to the bread with the salad leaves and serve.
